A Peanut Butter and Jelly Sandwich!
I made this “bread” using this recpie only altering it by using 1 TBSP of canola oil instead of the butter. The only thing I would change with this was I would slide the “bun” thinner and have less of it.. but it however was most delicious!

I found the recipe I originally used. It includes a bit of almond meal and cocoa powder, to make it taste a bit more like whole wheat bread. it’s really quite yummy…
Also, flax recipe, while I’m thinking of it (just as I’ve done it):
3 T. flax meal
3.5 T. water
1/8-1/4 t. cocoa powder (opt)
shake or two of salt, to taste
Stir. After a minute or two, the mixture will form a gel (just a flax gel, don’t know if you have used it before?). Pour onto parchment paper or (I use:) a silicone mat and spread to 4″x8″. Microwave for 3 minutes. Quick and easy “bread.” Best for PB or other sticky, but not gooey fillings (breaks apart fairly easily). Very high in fiber and protein and happy Omega-3s!

I’ve been making one or two, and freezing them? Do you do such things? It’s safe right?!
I’ve never used flax gel.. ahaha.. I’ve been using flax and grinding it in a magic bullet for the flax meal, it appears to be working.
