Sometimes You just need…

A Peanut Butter and Jelly Sandwich! :)

I made this “bread” using this recpie only altering it by using 1 TBSP of canola oil instead of the butter. The only thing I would change with this was I would slide the “bun” thinner and have less of it.. but it however was most delicious!

Cauliflower – it’s my new best friend..

Cauliflower has always been wonderful and delicious raw! I’ve always enjoyed it..

However I’ve never really enjoyed cauliflower cooked, until now that is! Due to my new diet restrictions, I’ve had to be resourceful in coming up with something to eat, that was still yummy, and resembled the norm.. otherwise I knew myself, I would simply miss the norm and find my self longing for it, and cheat, and then fail miserably at all that I am trying to achieve in obtaining some balance in my body.

So… I found this recipe..  which uses cauliflower as a base, I was very skeptical at first, but I thought I would give it a whirl… oh my.. it was good, like sooo good, I think you should all try it too :)

Place your dough, after mixed, onto your cookie sheet, and spread it out, like a pizza! mmmm  Then add some spices, and bake!

After baking it looks like this, you really could stop, right here.. and eat this like bread sticks… It really is delicious! Or if you want pizza,  add the sauce, and toppings..

And you end up with YUMMY delicious pizza, you’ll notice I could not wait for pizza, and I had a bread stick, before putting on toppings, again deliciousness.. you would never know it’s cauliflower.  ENJOY!

I am richly blessed!

Last night I went out for a semi long ride, 1:30 min on the bike, no problemo! I was actually looking forward to some time out with just me and God, I’ve had some great time lately with him during my workouts, and I was really looking forward to a long time with just me him, and the road…

But there were other plans… Just 4 miles into my bike ride, POP, fosizzle! Really?! I pulled off to the side of the road, adrenaline still going, my hands slightly shaking, evaluating my nice new flat front tire, bummer! Total blow out, irreparable but just putting in a new tube and continuting on was not an option, had I done this I would just continually ensue another flat, and then another, BUMMER! I needed a new tire and all..

I reached back into my saddle bike, pulled out my phone and dialed up one friend, no answer, than another, no answer, than a third, an answer! SCORE!! (Thank you JBox!) Thankfully, God has blessed my life with amazing friends, which I do not deserve or could ever have asked for but he has blessed my life more than I could have imagined with amazing people and amazing support.  Thankfully I do not have to run my race in life alone or on my own, which I am for certain I could not do, but God has provided me richly with amazing people to run with and people who encourage and challenge me along the way.

As I sat waiting for my new ride to arrive, I texted another friend who kept me company, and I even got to work on my tan, I made the best of it, might as well :) Life is good, and God is even better! I am truely richly blessed, I could have never imagine, having this many people in my life, I know full well that I had a full list of people I could have kept calling on, who would have come to my aid.. And not to mention that while I was waiting the two people I called first, called me back.  I am truely blessed in so many ways, I cannot even begin to fatham them all, I hope that you too are feeling just as blessed!

2 Hours – 33 Miles, Whew!

Saturday I did my first long bike ride of the season, with my Tri Coach, Jody (She ROCKS!!)!

It was a great ride, we started early at 7:30 and on a route, I had never been on before, but it was a great ride.  I am very thankful I got my bike fitted earlier on this year, I don’t think I would have ever made it on that ride had I not done it, but I was fairly comfortable and mostly painfree the entire ride, bliss!!

I thought for sure, two hours riding would seem like an eternity, and that I might fade before the two hours, but thankfully, having company, makes the time go by faster, and slip away quickly.  I had some great conversation with my Tri coach, and got some great tips for training in the heat, and riding longer rides.  She also has some major certs in various areas that I am totally jealous of!

Considering the longest ride I’ve rode this year had been 17 miles, at around an hour and 15 minutes, I was a little worried about riding 2 hours, but it went fairly smoothy, a little hilly, with one MAJOR hill (I guess known as the Toddville Hill).  We thankfully beat the heat and most of the wind.  One ride down, lots to go!

2 Weeks DOWN! Only 16 More to go…

So I have officially completed two weeks of my training program and have 16 weeks left, and I am still alive, to tell about it :)

When I first recieved my tri plan I thought for sure it was going to be really really hard, I mean kill me! I kept looking at it, thinking there was no way, but thankfully I am now into week 3 and it’s not sooo bad :)

I’ve  Swam 3 Hours (just under 4 miles), Ran 3 Hours (15 miles), and Biked 5 Hours (85 miles), in just 2 weeks.  I am still not sure I like seeing everything in time, but after talking to my Tri coach on Saturday during my bike I understand why she does it like that, and like she said it works… so as long as it works, I am cool with it. 

I keep thinking, I most definalty will be in great shape by Tri day, and I can’t wait!

Sometimes.. workouts don’t always go as planned.

Or as dreamed, or as hoped, or as successful as you might like them to be.

Last Wednesday was a great example of this.. I had to run 45 minutes, and in my mind that means around 4 miles.. no problemo!

I am not sure if it was the lack of carbs, the heat, that I can’t just seem to get along with, the 45 minute bike just minutes prior, general exhaustion, my body screaming at me with joint pain, dehydration or just not my day, but it was not my day.

Just minutes into my run, my hip was screaming at me, my body was yelling at me to stop from being hot, to hot, but I thought it would go away, but none the less, 15 minutes in, none of it was going away, like it normally does, so I stopped, walking for a moment, as I have numerous times before, gathering my legs underneath me, but when I started running again, It was a disaster all over again. Yuck..

So I decided to make the best of it.. I knew I had to be out there for 45 minutes, but it definitely wasn’t going to be all running, and I was had to be okay with it.. I turned my 45 minute running into running for a song and walking for a song.. Still tough, but I had to remind myself, sometimes workouts don’t always go as planned, just like sometimes life doesn’t always go as you planned it, and sometimes you just have to go with the flow.  This seems like the pattern of my life lately.. Sometimes life doesn’t always go as you planned or hoped or dreamed, but I am sure that God knows what he is doing in all of what he does.. so sometimes you just have to go with the flow.
